A cocktail menu has two different jobs
A cocktail menu is built for one of two purposes, and the quantities change with it:
- A pre-dinner cocktail: Served as guests gather, lasting 45–60 minutes. The aim is to open the appetite.
- A cocktail that replaces dinner: A standing reception, launch or celebration lasting two to three hours. It must cover the guests' dinner.

How many pieces of finger food per guest

Guests eat the most in the first hour, so plan to serve about half the total then. For evening cocktails and those that fall over dinnertime, use the upper figure.
Choosing the mix
A balanced cocktail menu follows this split:
- Cold (about 50%): Tartare and ceviche spoons, mini bruschetta, vegetable rolls, cheese bites
- Hot (about 35%): Mini köfte, chicken skewers, paçanga börek, içli köfte, tempura
- Sweet (about 15%): Mini tarts, lokum (Turkish delight), chocolate truffles
Include at least two vegetarian options and one gluten-free option. Label bites containing seafood or nuts, or brief the servers so they can tell guests.
Rules for good finger food
- 1One bite: Guests should be able to eat with a glass in the other hand. Two-bite pieces fall apart.
- 2No drips: Runny sauces, melting cheese and frying oil cause trouble at a standing event.
- 3Good at room temperature: A bite waits a few minutes while a tray circulates; avoid dishes that suffer as they cool.
- 4A sturdy base: Combine crackers, bread or pastry with moist toppings no more than an hour ahead, or they go soft.
Cocktail bites from Turkish cuisine
Turkish cuisine is a rich source for cocktail food. Meze adapt beautifully to small portions:
- Hummus on a spoon with crisped pastırma
- Mini içli köfte with yoghurt sauce
- Olive-oil vine-leaf dolma
- Çiğ köfte or marinated sea bass on crisp yufka
- Mini lahmacun
- Small slices of simit with kaymak and honey

The service plan
If food is passed by servers, plan one server for every 20–25 guests. Stagger hot bites out of the kitchen: a new kind every 15–20 minutes, so guests see something new throughout the evening. For cocktails of more than 80 guests, a live station (grill, pasta, sushi) spreads the load and gives the event a focal point.
