The particular rhythm of an engagement dinner
Unlike a wedding, an engagement is a smaller, family-centred event, often held at home or in a small venue. In Turkish tradition it is often the first long evening two families spend at the same table. So an engagement menu should keep guests at the table, make sharing easy and not trap the host in the kitchen.

Three rules for planning an engagement menu
- 1Respect both families' tastes. Well-executed familiar flavours are safer than an experimental dish.
- 2One main course is enough. Conversation runs long at an engagement table; one main and generous meze work better than a multi-course menu.
- 3Choose dessert around the engagement cake. If cake or chocolates will be served, keep the menu's dessert light and fruit-led.
Three sample engagement menus
Classic engagement table (20–40 guests, sharing)
- Cold meze: Hummus, olive-oil artichokes, aubergine salad, haydari, vine-leaf dolma
- Hot meze: Sigara börek or paçanga börek
- Main course: Roast lamb shoulder or chicken, iç pilav, seasonal salad
- Dessert: A fruit platter alongside the engagement cake
Modern plated engagement menu (12–20 guests)
- Welcome: Ceviche spoons, goat's cheese and honey
- Starter: Burrata, tomato, basil oil
- Main course: Sea bass fillet, beurre blanc, asparagus
- Dessert: Lemon tart or panna cotta
Cocktail engagement (40–80 guests)
- Bites: 10 kinds, 12–15 pieces per guest if the cocktail replaces dinner
- Hot station: Mini köfte, chicken skewers, vegetable tempura

A practical plan for an engagement dinner at home
- A week before: Confirm guest count and dietary restrictions; check tables, plates and glasses.
- Two days before: Finish shopping and make the olive-oil dishes.
- The day before: Have meze, dolma, dessert and sauces ready; marinate the meat.
- On the day: Only the main course's oven time, the rice and the salad remain.
For engagements of more than 20 guests at home, plan at least one helper for plating meze and service. The hosts should be with their guests that evening.
Söz versus engagement
In Turkish custom, the söz (promise) is a smaller gathering of a few members of each family, where dessert and tea are often enough. The engagement (nişan) is a larger event that calls for a full dinner. For a söz of 8–12 people, a dessert-led table works; for the engagement, use the menus above.
