What makes a New Year's Eve menu different: the long night
New Year's Eve is the longest dinner of the year. Guests arrive around 8 pm and stay at the table until after midnight. So an NYE menu shouldn't be planned like a two-hour dinner but as a flow spread across four or five hours. Serve every course back to back and the table is finished by 10 pm, with nothing left to carry guests to midnight.

The gap between the main course and midnight is deliberate. Guests digest and talk, and a dessert after midnight becomes part of welcoming the new year.
Three sample New Year's Eve menus
The classic Turkish NYE table
- Welcome: Hummus, atom (strained yoghurt with dried chilli), olive-oil vine-leaf dolma, cheese board
- Starter: Winter salad with smoked salmon and pomegranate dressing
- Main course: Roast turkey, iç pilav (rice with currants, pine nuts and chestnuts), roasted root vegetables
- Dessert: Kazandibi or baked rice pudding
Modern tasting menu (up to 12 guests)
- Amuse-bouche: Sea bass tartare on crisp bread
- Starter: Winter beetroot, goat's cheese, hazelnut
- Middle course: Chestnut soup, brown butter
- Main course: Lamb shank, celeriac purée, lamb jus
- Dessert: Quince, kaymak, cinnamon

A meze-led sharing table
- Cold meze: 6–8 dishes, served to the centre of the table
- Hot meze: Paçanga börek, calamari, içli köfte
- Main course: Whole baked sea bass or slow-roast lamb, family-style
- Dessert: Fruit platter and tahini cookies
A sharing table is the most comfortable format for NYE parties of 15 to 30 guests.
A turkey roasting timeline
The NYE turkey is where most mistakes happen. The rule is simple: work backwards from service.
- 2–3 days before: Start thawing a frozen turkey in the fridge (about one day per 2 kg).
- The day before: Brine or marinate it; make the stuffing rice.
- 1 hour before roasting: Take the turkey out of the fridge to reach room temperature.
- Roasting: A 5–6 kg turkey takes roughly 3 to 3.5 hours at 170°C. It is done when the thickest part of the thigh reaches 74°C inside.
- Resting: Rest it covered for at least 30 minutes after it leaves the oven. That window is also ideal for finishing the sides in the oven.
Allow about 500 g of raw turkey per guest, bone included. A 5 kg bird is enough for a table of 10.
What to prepare the day before
If you don't want to spend the night in the kitchen, at least 70% of the menu should be ready the day before:
- All cold meze and olive-oil dishes
- Salad dressings and pickles
- The stuffing for the rice
- Purées and sauces (reheated before service)
- Milk-based desserts and cookies
On the night itself, only the main course's oven time, final cooking of the sides and plating should remain.
Drinks pairing
Allow about half a bottle of wine per guest across the evening, plus a glass of sparkling wine each at midnight. For turkey and lamb, medium-bodied Turkish reds (Öküzgözü, Kalecik Karası) work well; for a meze table, whites and rosé. For an alcohol-free option, a pomegranate or quince sherbet brings the season to the table.
