Why café economics differ from a restaurant's
A café can open with less equipment, a smaller team and a shorter menu than a restaurant, which makes it look easier. But the economics are different: coffee and drinks carry high margins per item, while the average bill is low. A café turns a high margin into profit only with enough volume, and that depends on two things: the footfall the location brings and how long guests stay at the table.
Choosing the concept
| Concept | Main revenue | Critical issue |
|---|---|---|
| Specialty coffee | Coffee and drinks | Barista skill, bean quality, speed |
| Bakery-café | Pastry and coffee | Production space, the morning rush |
| All-day brunch | Food and coffee | Kitchen capacity, table turnover |
| Neighbourhood café | Mixed | Loyalty, long stays |
Equipment and fit-out decisions made before the concept is clear are the most expensive mistakes. We cover concept development in restaurant concept design.
Cost items
A café's opening budget is made up of:
- Rent, deposit and any key money
- Fit-out: Decor, bar counter, seating, lighting
- Equipment: Espresso machine, grinder, refrigerated display, dishwasher, oven (depending on the menu)
- Licences and setup costs
- Opening stock and packaging
- Working capital: Cash to cover rent and salaries until revenue settles in the first months
We cover current budget ranges and how each item is calculated in our 2026 restaurant opening cost guide; the same logic applies to a café. The item most often left out is working capital.
Location
A café location has two questions to answer: is there foot traffic in the morning and at lunch, and does it offer a setting where guests want to sit? Office districts can bring high morning coffee volume but quiet weekends; residential streets are often the reverse. Watch the location at different times of day before signing the lease.
Permits
A café is a food business too: it needs the municipal workplace licence and food business registration, plus a sales licence if alcohol will be served. We cover the steps in restaurant permits and licences in Türkiye.
Menu and operations
Keep a café menu short and design it for speed. The wider the food menu, the more kitchen, staff and waste you need. Standardising drink recipes by weight is the first step in controlling coffee cost.
