How long service training takes
For Michelin-level consistency to truly settle, soft opening experience must be added on top of core protocol training. The total period should be planned as 8-12 weeks.
Product and menu knowledge module
The service member must be able to describe every course at ingredient level. This module is supported by tasting sessions, menu origin stories, and supplier visits.
Service protocol and table management
Course service, table tempo, cutlery placement, and approach distance to guests are defined in a standardised way and reinforced through role-play exercises.
Reading guests and crisis management
Reading guest satisfaction signals and managing complaints are studied in a separate module. How the service team behaves in a crisis moment is defined in advance.
Soft opening and live service transition
The soft opening is the final exam of training. Working with real guests surfaces gaps that could not be seen in theory-based training and builds team confidence.
