Occupancy forecasting and table plan
Pre-service occupancy forecasting must align with kitchen production planning and staffing schedules. The table plan is optimised to support service rhythm and course timing.
Waitlist management
The waitlist is managed as actively as the reservation log itself. A protocol is built that monitors cancellation notification, automatic queue offers, and guest response time.
Special request and preference logging
Birthdays, anniversaries, allergies, and dietary preferences are entered into the reservation record. This information is shared with the service team in the pre-service brief.
No-show reduction protocol
A deposit, a 48-hour reminder, and clear communication of the cancellation policy reduce the no-show rate. The policy is added to the confirmation message and stored in the PMS.
