What service rhythm means
In Michelin service, rhythm is an operational timing system that ensures every course reaches the right table at the right time. When rhythm breaks down, both guest experience and kitchen efficiency are negatively affected.
Course interval timing
The course interval is determined by the guest's eating speed, the kitchen preparation time, and the floor team's table-reading capacity. The floor manager monitors these three variables simultaneously.
Floor-kitchen communication protocol
The delay between the kitchen "ready" signal and the floor "fire" command must be minimised. This communication is conducted directly, briefly, and in a standardised language.
Floor management roles
The floor manager manages table timing, reads guest satisfaction signals, and makes real-time corrections with the kitchen when needed. Keeping the service team within rhythm is the floor manager's responsibility.
Rhythm management under pressure
Rhythm breakdown during a busy service is unavoidable. What matters is fast detection and engaging the buffer mechanism. This mechanism is defined in the pre-service brief.
